Every year with the first Waning Moon of September it is abraded with natural stone respecting its bud, then sought to eliminate small, imperfect and broken grains, packaging only the best in small 650 g vacuum-packed packages.

This special process carried out by us guarantees the creation of risottos with uniformly cooked grains and a high degree of broth absorption up to 3.2 times the weight of raw rice.
